Do you want enough eggs for your self, or is this more small bussiness selling eggs?
Leghorns are great layers and eat less feed. They come in a variety of feathering colors but all lay a white egg.
Your dual purpose breeds are for egg laying and eating. Rocks, wandotts, astralorps....etc. brown eggs.
Easter eggers, olive eggers, araukanas all lay tinted eggs, green, blue, pink. MostLy green though.
Beautiful birds none exactly the same with a variety of colors can have ear tufts, beards, feathers on legs and small top hats.
Production hens are great layers for the first couple years but drop off after that. Large to jumbo brown eggs. They seam to be prone to egg issue death.
No hen lays concistantly year around, no matter where you are located. All hens take a break to molt (a yearly change of feathers)
The nutritonal value of your eggs will be determined by the health of your birds and what you feed them. The egg shell color has nothing to do with it, unless you eat the shells too....
