Okay so, the wife would like to raise some of our flock from scratch (pun not intended) but I'm trying to get the jist of this hatching our own thing. What is this "holding eggs for incubation" talk? Like I mentioned, extremely new venture for me. Any help would be tremendously appreciated. TIA

You can collect eggs for a week. Up to 10 days or more if you're really careful how they are stored. Hatchability starts to fall off after a week.
Ideally you want the eggs to only undergo 2 temperature changes. Down to about 60 or 70 after they're laid and then the rise for incubation.
During storage, they should be turned just like during incubation.
If they're going to be held over a week, cooling into the 50s is better.
