My wife and I are new to raising chickens. I was raised around chickens but never really took care of them... Now I find myself owning 12. The man I bought them from ran a busy hatchery and sounded knowledgeable. I was supposedly buying 3 asian blue hens and cock, 3 barred plymouth rock hens and cock, 2 Plymouth rocks, and he gave me 2 white cornish for a total of 12. They were supposed to be a week old and that was about 6 or 7 weeks ago. I never realized how fast they grow...

Welcome to BYC. Glad you decided to join our flock. Just in case the hatchery owner didn't tell you, your white Cornish are likely Cornish crosses which are meat birds produced by crossing Cornish roosters with White Rock hens. This particular cross grows at a superfast rate and is ready to be butchered at 8 weeks. It's one of the interesting quirks of hybridization. In fact, if you wait much beyond the 8 weeks to butcher them, they will begin having serious health problems due to their abnormal growth rate.
