Well my Empanada makers got here so quickly I had to go pick up a pumpkin and make pumpkin Empanadas. It's so easy:
For the dough:
3 cups of flour,
1 tsp salt,
3 TBS shortning
2 fresh eggs divided into 1 whole egg and one egg white
1 tsp of vinegar
1/2 cup of really cold water (really cold so it doesn't melt the shortning!)
Mix the wet stuff together in one bowl,
Mix the flour and salt together then add the shortning and cut it in with a pastry cutter or two butter knives.
Make a hole in the middle of the dry stuff, add the wet stuff and mix it together, use your hand at the end and just squish it together really good until the flour is all mixed in, you can add a little more if it's too sticky. Wrap it in plastic and put it in the fridge for at least an hour but if it's going to be more than 24 hours put it in the freezer instead.
Filling: Anything you want to put in! The ones I made today and mashed up small pumpkin and mixed it with a little sugar replacement, and some pumpkin pie spice.
Roll out your dough, use the bottom of the Tupperware Empanada maker to cut it out so size and then put it in the top of the maker, put your filling in and squeeze together. You can do it without the maker,, but I got the maker and had to use it! I then put them on a cookie sheet and bake them @ 350 until golden brown.
You can deep fry them too,, if you like it that way!
