Ok, so we just finished processing chickens for the first time ever. We only did two this time out, not knowing what to expect. All actually went quite well, but I do have a couple of questions. We did one older hen and one 6 week old cornish cross.
So for the older hen, austrolorp mix, at least 5 years old has not laid an egg in at least 2 years. There was a lot of bright yellow fat both under the skin and inside the abdomen. Is that normal, or a problem?
For the cornish cross, about 6 weeks old, the carcass is quite red. I think we did not leave it to hang and bleed out quite long enough, because there was still some blood while plucking. Problem?
