Newbie questions

Ok, so we just finished processing chickens for the first time ever. We only did two this time out, not knowing what to expect. All actually went quite well, but I do have a couple of questions. We did one older hen and one 6 week old cornish cross.
So for the older hen, austrolorp mix, at least 5 years old has not laid an egg in at least 2 years. There was a lot of bright yellow fat both under the skin and inside the abdomen. Is that normal, or a problem?
For the cornish cross, about 6 weeks old, the carcass is quite red. I think we did not leave it to hang and bleed out quite long enough, because there was still some blood while plucking. Problem?

I have heard that layers that are past their laying days, tend to have a good amount of fat on their bodies. Sounds fine!

Not sure about the Cornish though, others will have a clue

All good! You are correct that the CX most likely didn't bleed out well. No problem. I would recommend a good soak in very salty water prior to cooking, no health reason to soak. Just because.
