Remember buying a chicken in the store 50-55 years ago? Only thing you could find over 3# was a stewing hen. Heritage birds take about 24 weeks to harvest but will dress 3-3.5# and be much tougher than the 8 week old CX. As for the long legs, that's a problem I've only had with heritage turkeys. For them, I remove the leg just below the drumstick and scald and pluck separately.
