Hi, I've always started with chicks myself. Some prefer to start with more mature birds because they don't have to wait for eggs, plus you can be sure what the gender is (no oops roosters).

Chicks will become way more friendly towards you than adult birds. Chicks are just fun to watch grow up. Many of the heavy breeds lay into their 6th year so this shouldn't be an issue.
