I have five chickens who lay pretty regularly. They are molting now but I have not had any eggs in that coop for almost 2 weeks. Any suggestions?

It is normal for chickens to stop laying when they molt.

Some of them start laying again when they are done growing their new feathers, and some take the winter off and start laying again in the spring.

yep. its so they can conserve their nutrients because their energy is used to rebuild their feathers.
