Hi Roger and welcome to BYC. You have some sound advice and great links. I'd suggest starting off with less than 25-30 birds and see how it goes. You may find that having 6 eggs or so per day is more than sufficient for your needs, plus it reduces the level of financial investment required.
Wherever you choose to live, you can contact other members on the relevant state thread (link given by Teila) and I'm sure that they help you out, in terms of coop construction, predator-proofing, whether free range is a good way to go, sources of appropriate feed etc.
Hi Im in the same boat as you. I ordered and received 11 Jersey Giant chicks March 30th and out of the 11 only two hens. The rest I found homes for but am anxiously awaiting the two to start laying.
