no-peeling apple recipes?

I cut the apples with a knife, leaving all peels on. I sprinkle with cinnamon and sugar (plenty of). Cover with tin foil.

Then bake until done in oven in a 9 x 13 pan- don't remember how long. Then place in tupperware and freeze.

I pull them out for quick microwaving.

I use an apple peeler/corer/slicer like Oregon Blues mentioned. Pies stopped being a pain to make after getting one!
