not sure how to count to 21

If I set my eggs on say, Friday morning, would that be day 1 or would Saturday be day 1?

If you set them before noon on that friday you count that day as day one. If you set them after 12 noon on friday, saturday is day 1.

Friday is day one not saturday. You count saturday as day one if you set them friday afternoon or evening. Goodluck, -Jay

All I know is if I set them on Saturday they hatch 3 weeks later on Saturday.

I'm agreeing here. If you set on a Friday they are going to hatch on a Friday three weeks later. That Friday is day 21.
So, if you get confused counting up from the set day you can always count down from day 21 to know when to change your humidity, etc.
