Not very active pullet in the morning

The iron in leafy greens prohibits calcium absorption so it should be limited. Too much of any treat dilutes the nutrition their feed. That also includes giving scratch everyday. It's not good.
Ok I will let them have just a bit later and scratch they get a half a cup per 8 hens I don’t think it that much also greens they have 1 kale leaf and maybe 2 lettuce sometimes tomato I was doing this for a year no issues till the day we re homed a rooster and all hens are good but one who was always waking around with him… so I don’t see the leafy green having issues here … cause at this point she won’t even eat that … no food at all she maybe grab few pieces of scratch … she did drink water a lot … which is good I guess.

She may have bonded with him, & is now not happy.

I'll tag in some other's who maybe able to help you more then what I can.

when she came out of the coop she sit on the roost outside and just sit there, she jump off just to drink. She didn’t lay an egg since Sunday ( normal egg ) Monday she laid a soft egg. Then nothing till today and it’s Friday. She perks up and act normal in the afternoon, eats, drinks, poops fine, free range, scratches, runs with other hens. No issues. Then in the morning same situation, alone, sits or stands, walk around for a bit but then goes into a corner and sits alone.
I would check to make sure her crop is emptying overnight. She's drinking, but you don't mention a lot of eating.
I would also give her 1 Caltrate with D3 for 3-5 days.
The soft shelled egg might have been a glitch, but repeated behavior for a couple of days, I would worry she's having difficulty passing another egg, especially since she's perking up later in the day.

It's possible your pullet is a bit depressed over the rooster being gone, but I would still check her over for all these other things. They do get attached. A pullet or hen that is in constant companionship with a rooster relies on their protection as well, so observe to see if the others are picking on her.

The crop is empty everything is normal no signs of egg bound but if she don’t eat much how is she supposed to do an egg ? I’m giving her calcium and she have that in the vitamin water as well … she is moving bit more this morning but still looks weird , she do not looks like a sick pullet more like a sad or depressed one … vent looks good … she didn’t poop much ( since she didn’t eat much it’s not much poop ) tail is up the feathers are looking good , eyes and face and comb is great …no signs of any sickness. I guess I will confit to watch and observe ? Can I give her more protein ? Or try a scrabble egg or cat food ? She use to love this … I wonder if maybe she will eat that ?
