We are having a cookie exchange at work tomorrow. Yum, can't wait. I am making Oreo Balls. They are incredibly sinful and easy to make.
Recipe:
1 pack of oreos, crushed
1 pack of cream cheese
2 cups of chocolate chips
1 tablespoon of shortening
So, mix your cream cheese with electric mixer until fluffy. Add the crushed oreos and beat on high until well mixed.
Take that mixture and put it in the freezer for 2 hours.
After 2 hours remove from freezer and roll pieces of the mixture into about 1 inch balls.
Melt your chocolate chips and shortening in the microwave or in a double broiler.
Next, dip the oreo balls completely into the melted chocolate using a toothpick.
Put on wax paper and after they harden, put them in the refrigerator. This makes 3-4 dozen or so depending on the size you make.

This recipe has many possibilities. You can use regular oreos and semi-sweet chips, or substitute white chocolate chips. I am doing one batch with each.
Or get mint oreos and use white choc chips or any other combo!

Spaghetti is for dinner in our house....what is everyone else having?
Breaded baked fish, homemade cabbage/carrott cole slaw, mashed potatoes, coffee & water.
(normally fish is Tue, but we had BBQ chicken, greenbeans & corn last night)

And for those who wonder - tomarrow for Solstice Eve we will have a FEAST:
Pork Shoulder (our own farm raised/processed), w/ al grautin potatoes, slaw (see above), some home grown home canned Tom & Yellow Squash,
and my special homemade Oatmeal Raisin Cookies, AND Choc. Cake, and Homebrewed Meade.

Yeah, I gave the short story on that, as the tank had been neglected for a while so it wasn't looking it's best even when it sprung a leak.  Mostly, I ran out of CO2, and didn't bother to get a refill.  That picture makes me want to fix up the 40 and make it look pretty though. :)

I know exactly how you feel.
