Odd secretions from meat...

Well, I did a Roo today I got off CL, but I noticed something odd.
There was a large buildup of pure clear gel/slime coming from the meat. It came off easy and it was invisible and you wouldn't know it's there until you touch the meat and feel it.

If anyone has ever kept freshwater aquariums, you will know that fish also get this coating. But only when they are alive and stressed does it become excessive. It's called the 'slime coat'.

What could this be?
 
I know what you mean about a slime coat in fish, but I have to say I have never noticed it on any of my chickens. That is a new one for me.

Was that there after you rinsed him? I get that when washing off most fresh meats, especially on vension. I get a little bit from chicken on the breast meat, if I skin the breast back.
 
Yea, it was weird, but didn't seem bad. And I get that from the fact the meat was in great color, the slime was crystal clear and even throughout. Maybe if you do it all while it's still so warm and very fresh?
 
Yes, some when the skin came off. Then more after a rinse and the longer I left it be, the more accumulated.
 
I never noticed it really when cleaning chickens other than the bit I get and ignore and discard, but I can tell you it is REALLY present when cleaning venison. I actually use it to "clean" the meat - because it's easier to just kind of peel that stuff off than to try and pick off the hair or whatever gets stuck to it. It's a thin, tacky membrane between skin and muscle before washing, but it absorbs and holds water like no other. It gets big and bubbly, and weird. I just gently pull it off, and the meat is really nice and clean.

I think I just disregarded it on chickens because I'm used to so much of it on deer

I see that stuff on some grocery store chickens, but not all. And turkey too. I don't know what it is but I don't worry about it.
 
Ooo...that's another on that is really insane - wild turkey. I've not butchered a "normal" tame turkey, but I've done wild, and that stuff is just insane on the breast. Again, I just use it as a way to peel off any yuck that gets trapped in it.
