Can you change the date you put in or is it once you put it in you can never change it?

You can change it as often as you want, but when you change it, you forfeit that guess and someone else can take it.

I do too… we don’t say “It’s the 15th of February, 2022”, we say “It’s February 15th, 2022”… I guess it’s an American thing?
