You can cut up chunks of the bananas to add to the batter. It doesn't have to be mashed. My banana muffins get both mashed and diced bananas. The diced bananas are folded in at the end.Ahh dang! I thought it was real pancakes with bananas in them

I can honestly say that I have never tried fruitcake. It's because it has those cherries in it and I find them so sweet that I just can't. I tried fresh cherries a while back and by a while back I mean within the last year lol. I really enjoyed the fresh ones. The flavor isn't as strong. I really liked them. It must be the syrup in the maraschinos. Idk.
