I usually do too. Sometimes I get lazy though.I crack all eggs in a dish separate from whatever I am making. I feel it helps me spot any anomalies before they make it into the rest of the ingredients.

Mine don’t last long on the counter so I always refrigerate. My house temp stays at around 74 in the summer. And 72-73 the the rest of the year

What’s wrong with those?I confess if I know the egg is from my most reliable gals I may crack right into the skillet. I have one or two who give me random meat spots. I blame the hawks for scaring them.
