We have never run out of eggs. Our flocks are staggered in age. So there are always some hens that are in their peak egg laying cycle. We have found that freeze drying the eggs that we use for baking and in other recipes. Saves refrigerator space and gives us a reserve. For when our hens do have a dip in production.
