OK...So what did I do wrong?

Take the time to pluck another CC. Probably didn't scald long enough but that is another issue...

Take the bird in and there is a dark blue strip down the middle of the breasts(down centerline) Not eye appealing to the wife and kids. I look under the skin and it is blood. the breast does not appear to be bruised. I used the bag method(no cone) and it worked pretty well. bird didn't thrash near as much....

Did I not bleed it out enough? The only other thing different was I grabbed it by its feet and it flapped wildly while putting into bag, but again I do not think it was bruising... Maybe I am wrong.

Any way, what did I do wrong. I guess I will skin this bird....

Hmmmmmm. Not sure there. We processed 5 a few weeks ago. just took the to the old chopping block, and let them flop around on the ground afterwards. No bruiseing...no blood under the skin. Was it a clean swipe with the knife? I have always just used an ax, or hatchet. blood splatters, but its just a reminder....it gives so we can have.

Almost clean axe swipe. First went through neck just not all the tissue. Second got all the tissue as well.

Yup, thats how we did it. Hmmmm. I dont know. Did you skin the bird? You said there was blood under the skin? Wierd. Was this a large bird. heavy? Maybe it was bruiseing from laying? Sure wish I could help ya there. Im sure its just as tasty tho!

Not sure but it's probally not bad for you. Did you keep it hung upside down when it was in the bag? I hold my birds head down for about 3 minutes to get all the blood out.
