So, today removed old rooster and received new rooster. Question is...if new roo bred hens today ...who's gonna be the daddy of next couple weeks eggs...DO the most recent sperms get the prize or can I collect eggs for hatching hoping my old roo got there first?

Generally speaking.. Hens do not need to engage in copulation very often. Usually 3 week is what hens carry reserve of male sperm. I have no idea how the storage inside hens allots the fertility supply.
If you wanted your old roo to be the Baby Daddy,,,,,,, you should have planned to get eggs before newcomer arrived. Other option,,, get old roo back,,, and confine newcomer for duration.

WISHING YOU BEST,,,,,,,,,,,,,,,,,,,and :welcome
