I believe I have read someplace that the older the chicken, the better the taste. Is that possibly true? It would seem the opposite should make sense.

But at least in terms of the medicinal qualities of chicken soup, for some reason I believe I've read that an older bird provides more benefit and better taste.

Anyone know the facts on this?

Older usually means tougher. An old bird is still edible, and with proper cooking methods, can be quite delicious.

As for health benefits, it will so depend on the diet of the bird, I don't think age really is a factor.

It's true...

Older birds have higher amino acid counts wich makes the meat more complex.... more nutrient dense... and because of this you get a higher quality of flavor. I just love soup chickens!!
