Older Layers - tough??

I'll be getting my older brahma layers processed tomorrow. They're about 2 years old. Will these be tough? Do I need to do anything special to them? I'm not processing them, were taking them somewhere.

Just wondering, never had chickens processed before.
 
I have found that the older birds like that are somewhat tougher, so I use them in stews and casserole dishes.

I'm curious about this too. I have heard that anything older that a year is going to be tougher. I just had some of my layers processed that stopped laying. I have them in the fridge and will be putting some in a brine tomorrow. This is my first time having fresh chicken. I am planning on either slow cooking in the crock pot or cooking low and slow in the oven with these.
 
Yep, the Crockpot and the Stewpot are two good things to use.

Also if you have dogs, feeding them raw to the dogs after about a week of freezing is always a plus, too.
