Olive eggers and other questions

Short story - I want olive eggers and I have other questions

Long story - I built my chicken coop last September(ish) and started with 10 hens and 2 roosters. I don't even remember the breeds because a few months later a couple of dog broke in and killed all 12. Needless to say I was bummed, but luckily my dad was wanting to get rid of his and I got 5 hens(3 rhodeisland reds, 1 barred rock and 1 ameraucana) from him. My friend, who got me started in chickens, picked up 2 roosters for me so he could get a next generation for his hens, but he lives in a neighborhood that doesnt allow roosters. The roosters were an ameraucana and a blue copper moran. He told me about the olive eggers if you cross the moran with the ameraucana hen so I was intrigued.
I ended up borrowing his incubator and without isolating the roosters hatched out 5/7 eggs (3 were americauna eggs). The chicks out of the blue/green eggs were all chipmunk pattern with one will defined and the other 2 more broken. The other 2 were light brown eggs and one chick was yellow and the other black.

So... other than separating the roosters to make sure I know who the father is, what else should I be doing?
Will the Americauna rooster cross with the RhodeislandRed or barred rock to make an olive color egg?
Will any of the crosses produce a sex link trait?
What do most people do with unwanted rooster chicks? Axe?

As far as creating olive eggs. It’s done by crossing a dark egg layer with a blue egg layer. They might make an olive color but it will be more blue green than olive green with the RIR and other brown egg layers.

I eat all my roosters. Sadly, even if they’re nice. I just can’t keep everyone. I have 3 already and will be adding another, but when you hatch your chicks you just always get a good handful of roosters. I do it when they’re 3-4 months old.
 
I’ve always thought that olive eggers are a cross between a blue laying EE and a black copper marans (I have an olive egger and the lady who sold her to me told me this)
 
I have the Maran rooster x ameraucana hen cross which should give me the olive Eggers, I was curious if it worked in reverse (the ameraucana rooster and a brown egg layer hen).
