Ok, well I just wondered. I think taking eggs in mid hatch would be the same as opening the incubator. You probably wouldn't want to disrupt them like that normally.
If they were my beautiful babies I would round up Momma and babies, keep them all together, and let Momma do the hatching/raising work. She'd be better at it than me and, after 6 weeks, when the babies don't need their Mom, I would release her back to her wild ways and tame the babies - quite an easy chore.
