on average when does a cockeral start mating

just wondering because my cockeral is 11 weeks and im wondering when I should start to see behaviors like that

I have one rooster and 11 hens. He started grabbing them right about when they started laying, at 5months old. He is a very nice rooster--friendly and personable, and has remained so even though he's grown up now.

I am wondering this to because my 8 week old just did the rooster-shuffle-dance.
 
I've got a batch of 10-week-old chicks and although I've heard a few weak crows from them, no one has begun mating yet. I don't remember the age I've noticed it in other batches, but it usually seems that the cockerels are interested long before their pullet flockmates are agreeable. I'll hear a lot of squawking, flapping, & yelling, look to see a cockerel holding a pullet down and trying to complete a transaction. I know my pullets are nearing laying age when they are more willing to conduct business with the cockerels.
