One of my hens is consistantly laying poopy eggs...need advice, please

Sometimes if the hen has lots of access to greens, the poop gets a little runny at times, which may cause a dirty bottom. Try cutting back on the greens for a few days, and see if it makes any difference.

I use a vegetable soap for cleaning the occasional egg that's dirty. The soap is made for washing veggies, so it is non-toxic, and leaves no residue, or taste. Rinse well.
