Okay, so I think I've read everyone's thoughts, experiences, and opinions about how long fresh eggs on the counter and/or in the refrigerator without removing the bloom. Here's what I THOUGHT I came down to -
Up to one month on the counter.
Up to 6 months in the fridge.

That's what my intent is - to sell our beautiful, pastel-colored 'mini Dino eggs'
But I wanted to be sure about the 'Best By Date'. I'm up to about 120 eggs, with 5-7 eggs coming in per day. (We just started in Sept)

Eggs live better longer in the refrigerator, and that's going to make buyers happier.
If you use your room temperature eggs within a short time, fine, but there's really no substitute for that ice box!

Thanks for the info. At this point, we're only letting them sit on the counter, in cartons, for a week or so. Then they go into the fridge. When it's time to eat (or sell), we wash, dry, and prep.
