Opinion on Ear lopping/tail docking

We had a silver fawn Dobie female (rare color), she was stunning with her ears cropped and tail docked. In guard dog breeds the ears are cropped so a person cannot grab them. When a person gets ahold of a dogs ear the dog is no longer a threat.
This sounds like an old wives tale to me. How would grabbing a dog's ears presumably disable(?) or tame(?) it? Even play fighting with my old dog when I'd (gently) grab his ears and shake his head, he would just twist his head around to (gently) grab my wrist in his mouth, or push my hands away with his paws.

I agree with this. But I do see the advantage of having a guard dog with cropped ears. It is more intimidating, and half of the battle of a protection dog is deterrence

No dog is a threat against a serious human being. The meth-goblins in my area just spray guard dogs with mace, or toss them poison beforehand if they want to rob somewhere. A guard dog needs a human partner or it's defenseless
