Our 7 month old Jersey Giant cockerel, Stewy, had become quite aggressive to the point that it was not in our best interest to keep him around. So, today we slaughtered him and he’s in the refrigerator, aging.

My husband and I both researched various methodology. Having both killed game birds in the past we we are both comfortable with the idea, but neither of us had ever fully dressed out a bird (plucking, gutting). Once we agreed on the various steps and methods, we laid everything out, did a mock walk-through and agreed on each of our roles.

I think it went fairly well. I learned where I can improve on the butchering process just by having a sharper blade, and some appropriate shears.

Stewy dressed out at 4 lbs 2 oz. I was pleasantly surprised by the amount of fat he had. We plan to braise him and make enchiladas.

Tell us about the feather remover....
Hubby ordered it from amazon. It attaches to a drill motor And seemed to work quite well, even in the tight spots (under wings, etc) without tearing the skin. I’m not sure it’s any faster than doing it by hand since this is our first time. Maybe when we slaughter more than one at a time we will compare methods.
