packaging broilers for freezing

I can't for the life of me remember..... Haven't been able to find it either, but that's no surprise. I'm processing 24 cx this week (did a couple yesterday just to see if I had everything). I have a vacume sealer, what I need to know is when you "let them rest in the fridge for a couple days before freezing, can they be packaged in the vac seal or do they need to be open? My fridge will dry the skin if they are not sealed at least some. The 2 I did yesterday are sealed and in the bottom to wait it out, should I un seal them (wife says no seal). Any help appreciated thanks

We package them first in poly bags before putting in the fridge. I understand vacuum pack works well, too. What you do not want to do is freeze them or eat them before they have had a chance to rest, or they will be tough.
