They may very well be nutrient deficient...they should have access to feed every hour they are awake. Put the feeder where the crows can't get at it.
What kind of pellets?

Sorry I should have explained - they free range all day. They usually don't even finish the pellets that I give them because they're too busy free ranging all over the yard and garden

Eggs with papery-thin shells or "rubber eggs" as I call them, is a calcium deficiency. This means that the hen laying these eggs isn't getting enough calcium. I know you said they won't eat oyster shells. Have you ever tried feeding them their eggshells. I feed my chickens their eggshells and it helps them out a lot.

Calcium citrate has 21% calcium carbonate, Caltrate, kale, yogurt, short term, Tums 40% calcium carbonate are all good to get a quick 'fix'. Long term, oyster shell grit is better along with a nutritionally balanced feed.
