Pasture for turkeys

What kinds of pasture grasses and legumes would turkeys and chickens enjoy most or would be most nutritious? I am in the Phoenix area, so it would have to be plants that can tolerate the heat (although, they don't necessarily have to be drought resistant...I am on irrigated land).

Clovers are the best. Young alfalfa,young cereal grains, field peas,rape,soybeans,etc.

Basically anything with a lot of calories and high in protien.
