Peanut Butter Fudge and No-Bake Cookies

Now I'm on a mission for fudge that doesnt require marshmallow.

Thanksgiving objective is munchies/desert so I now have peanut butter no bakes, chocolate no bakes, and caramel no bakes, lol. A Caramel cheese cake,, and orange fluff! WOO HOO
 
Peanut Butter Fudge

2 cups sugar
1 cup evaporated milk
pinch of salt
2 Tablespoons butter
1 teaspoon vanilla
3/4 cup peanut butter

Combine sugar, milk and salt ~ bring to a boil and cook for 10 minutes ~ watch carefully as it can easily boil over.
Add butter and continue to boil until it reaches 235 degrees "soft ball" on a candy thermometer. Too low and it will be runny (good for ice cream topping!) Too hot it will get crumbly.

Remove from heat and add vanilla then peanut butter (caution ~ mixture will spatter some when vanilla is added). Stir well until peanut butter is thoroughly mixed in and mixture starts to thicken. Pour quickly into a buttered pan. I always make a double batch and set it in a 9 x 12 pan.

This recipe does not need to be refrigerated and sells well at bake sales.
 
In my quest I found these, sounds very simple and yummy!!!

CARAMEL FILLED COOKIES

2 1/2 c. flour
3/4 c. unsweetened cocoa
1 tsp. baking soda
1 c. sugar
1 c. packed brown sugar
1 c. butter, softened
2 tsp. vanilla
2 eggs
48 Rolo candies

Mix flour, cocoa, and soda. Cream eggs, sugar, vanilla and butter until fluffy. Add dry ingredients; mix well. Chill 10-15 minutes.

Place 1 tablespoon dough around 1 Rolo (flour hands). Bake on ungreased cookie sheet for 7-10 minutes at 375 degrees. Cool 2 minutes, then finish cooling on rack.
 
I was told by a relative that these are awesome.

Caramel No Bakes

2 cups brown sugar
1/2 cup milk
1/2 cup butter
3 cup quick oats
1 tsp vanilla

In a saucepan add sugar, cocoa, milk, and butter. Stir constantly. Bring to a boil. Boil for one minute. Promptly remove from heat. Quickly add peanut butter, quick oats, and vanilla. Working quickly stir until combined and drop by rounded tablespoons onto wax paper or foil. Cool and enjoy!

Up to try anything but I have to say the "velveeta" part does deter a little. lmao Although the best roast I have had used Coke a Cola and the best bbq sauce ever has grape jelly in it lol
