has anyone here used a food dehydrator?

I am thinking of getting one

As I am planning a big veggie garden............I thought I dehydrator might be useful in case the yield is too much at one time.

I know freezing and canning are options too.........

does anyone have experience with dehydrators and have some insider info to share to someone new to this type of thing?

If you can handle the price tag, go for the excalibur, top of the line and works great........

gonna try drying some onions this year,,,I use them often...
 
I agree with wingstone, we have an Excaliber and we like it a lot. We have used several other round ones and we were not pleased with them at all. There are a lot of things you can dehydrate, we use it a lot to make our own fruit rolls. Just thinking about those fresh strawberry fruit rolls makes my saliva

Don't have a dehydrator but made chive cubes last year. Yummy! I took about 1/3 of the crop. rinsed, diced and
put in ice cube trays with just enough water to hold cube together. When frozen, dumped in snack size bags and put
the snack size bags inside quart size bags. Used snack and storage, not freezer bags. So great! Used up all 60 cubes
by New Year's in just about any cooked dish. I need to do the whole crop next year! Retained color and taste without
having to add anything to the cube but chives and water.

Karen is right about freezing herbs. NEVER dry them! You'll lose almost all the flavor. Herbs also freeze well just washed and stuffed into freezer bags (the resealable kind). Flatten them so you can just break off what you want and add it to the pot.

Drying works great for foods where you value the carbs and want to store a lot of that efficiently. I haven't use a dehydrator myself, but I bet there are thousands of great web pages about it, I just haven't looked.
