Heres a quick cheaters way to pickle hard boiled eggs. Drop peeled eggs into a jar of good quality kosher pickle brine. We eat the pickles and save the brine just for this. We usually add a couple of cloves of peeled garlic and a hot pepper or two. If you like pink pickled eggs do the same thing except drop them into pickled beet brine. I usually add a teaspoon of horshradish to the brine to add a bit of kick. They are really pretty sliced and added to salads. They need to stay in the brine for a week or so before you eat them. They dont last long here in either variety.
