If you have a fenced area for them to forage in and it's safe then by now they should know they are home. In the evening if they are reluctant to go inside what I do is use a long pole old mop handle will even work, and walk behind then and gently guide them to their house usually once we start they know the routine and go in on their own. The name of the game with geese is slowly walk behind them.
ok but my property isnt fenced up will that be a proplem
 
ok but hey are we have a lot of thick bush that acts like a fence
Only thing I worry about even with thick brush is foxes can hide out just waiting to take one. or 2. But it's basically up to you, you know your area better than we do. Not meaning to scare you but i feel alot better knowing mine are behind a fence.
 
They also drink a LOT of water

They do don't they and splash alot of it out too. I wouldn't keep them on newspaper though it is so slick and can cause them to get leg problems. Some use a broiler pan that has a top with holes and put the water container on it too keep bedding drier. it's a challenge no matter what we use.

@RoboDuck will have to help you on sexing all I know is the females are darker. similar to how we sex Embden goslings. They sure are adorable though.
Female. The males will be noticeably lighter and have a yellow bill. And as messy as they are, they don't even begin to compare to ducklings in that department. Ducklings are care free and will actually drink themselves to death. Goslings and later geese, have a more dignified aire about them.
