Most white egg layers are Mediterranean (those are the ones who don't like people) 
their are nice ones lay to small (bantams)
I have CA whites being shipped from ideal next week they lay white (this is a Leghorn mixed with barred rock or black sexlink) they are SUPOSE to be calmer because of mix ((I will let everyone know))
most of the eggs you get in the store are around 4 to 5 weeks old
(most of those chickens are kept in cages, never see the light of day & fed mash!! ((doesn't sound healthy))

Fresh eggs will taste a little different because you supplement with fresh fruit, vegetables what ever was left from dinner they will eat grass the eggs will be healthy!
