I’m thinking about painting the inside of the coop with PlastiDip. I figure the rubber like paint would protect the wood and make it easy to hose off.

Any thoughts?

If going against wood, I would be concerned with its adhesion to it, Likely to peal over time (in big sections) as wood is porus, and then there is nothing you could do to fix it. Plus, it would take a lot and the stuff is fairly expensive compared to paint. Stick with Semi-Gloss or Gloss exterior latex paint for the inside of your coop!
