Please help! Very Confusing Gender and Aggression

We have 6 week old rouens. We were told that males have more raspy voices. Males also get a green sheen on their heads. We were also told that bill colors matter with genders. And facial features are more pronounced at this age for males. We were told that if they have a green sheen, they are definite drake.

We have 2 of them who have raspy voices and a green sheen. One of them still cheeps a lot of the time lol. One was an early quacker we heard it at 3 weeks old :O And to this day, that one has a VERY distinct quack. Not raspy at all. So we assumed female.

Then yesterday, we were watching them in the sun and all 3 had a VERY noticable beautiful green looked almost like a glow on their heads. The 2 with raspy voices also have Bill's that look a little lighter. The one we thought was female has a more plain brown bill and the face markings are not as pronounced. Almost like fading.

For my aggression issue. The 2 that have the raspy voice have always been weary of us, so we don't bother them. My daughter sometimes runs up and down their pen, and all 3 just watch her almost as if amused, even when she got close, they didnt spook and run, they just stood up walked back a few inches and lay back down. She is never in the pen without us, she does not have the physical ability to sneak in. All seemed fine.

That one that quacks strongly was very friendly. I could hold it daily with no issues and it would eat mealworms and food from my hands. Suddenly 2 days ago, my daughter ran up to the pen asking to come in, I was holding the duck, it turned on me. And pinched me very hard. And completely spazzed out. I let it go to let it get some time to relax I assumed maybe my daughter scared it or something. I go out to their pen several times a day. But now none of them will come near me. Wont even come close by for a yummy treat. And we make my daughter stay inside when I'm trying to sit with them just in case. Yesterday, I sat with them all day and once tried to pick it up. It quacked, kicked and pinched me.

The other 2 are not like that. They dont want my attention so I dont normally try. But I did pick them up today and they were fine. They were calling to the other two when I did pick them up and they tried to get away, but didnt get mean.

I'm worried. If I cant get them to calm down, they are going to be dinner. My husband thinks that the behavior might be the breed, he is more interested in the pekin over the rouen, as many people told us that pekins are way friendlier and calm. Is this true?

Thank you to anyone who will offer their insights. The duck in the picture is the one we thought was female. And the one that is acting strangely.

So to update, you were right. Something must have scared this one. I gave them space for a couple days and today I was able to hold, relax, and pet with no issues. This one is also a tad smaller than the other 2. We are still curious if it is male or female. While we are 90% sure the other 2 are male.
