Fried polk Salad stalks are very good! You fry it just as you would okra. YUM!!!!
I also cook the greens with an egg, a bit of green onion and some bacon drippings.
I love the stuff!

Poke is a type of green that grows wild. you pick it when its about 8 in. high, it can grow very large, I've seen it taller than me, and I'm 5'4. When it matures it has berries on it that are poisonous. Its a real big deal down south.

I like it. My grandma used to make it. My mom never would make it though. I haven't done it myself but I got a plant growing in my yard. The chickens are all smart enough not to eat it.
Here's a pic of it at the end of the season, the leaves are wilting because the berries are all set. The red vines are really noticable.

Yea, we have the stuff growing all over the place here. My chickens love the little black berries that grow on it. We don't eat it, I'm too lazy to pick it and cook it when I've got a garden full of really sweet collards right now.

ramps are a wild onion that grows here . they are like a cross between onion and garlic.
