Polish chick's comb got red in minutes

I was outside feeding my chicks mealworms and hold them and then went inside to refill their food. When I came back Little's comb had gotten all red and pink! They are only three weeks and Little was the one chick that I thought was a pullet. What is going on?

From every rooster I've had, it's not so much the redness of the comb, but the waddle development. There is still a chance Little is a cockerell, but until he/she shows signs of early waddle growth I would still assume Little is a pullet.

Okay, I went back out and her comb was back to its normal orange color

I wouldn't assume pullet unless it was sexed, I would rather be surprise than disappointed.

But at that age it's just flushing... I see you already discovered that though.

Thank you, it's just that I think that my other two chicks are roosters and little is a hen from looking at their crests when they were little so I was freaking out.

Crest won't be fully in yet.. and so may be very inaccurate still.

But, I'm sure you can see the subtle differences if you are able to watch them that we can't detect fro this pic.
