crepes wish they could be pancakes....just saying

If you want to try a new thinner type of pancake, try this:
1 cup ap or mello Judith flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
wisk tgether
in a large wet measuring cup/bowl whisk together:
1 cup plain or vanilla yogurt
1 cup buttermilk
1 chicken egg or equivalent. Do not use just whites as the only fat is the yolk. You need yolk in it.
now add the dry to the wet and whisk well, then remove whisk and do not stir again. Heat your griddle or pan. The batter needs a minute or two before cooking. Grease your hot surface, I use butter. With a flattish spoon like a table spoon for tiny or a large metal spoon for stirring a deep pot fir larger size, gently scoop out a bit of batter and spoon onto the hot surface. This is easier than it sounds. Do not stir the batter after removing the whisk. I can’t stress this enough. Cook till loses wet edge, flip and cook to golden on both sides as usual. These are thin and yummy. I bitter and eat out of hand while cooking fir the kids who prefer syrup. To change these up You can change any or part of the milk products to sour cream. The more sour cream, the denser and richer the resulting pancake is. Don’t really want more than 1 cup sour cream or it’s too thick to mix well. I use the sour cream version spooned with a table spoon as appetizer bases. Yummy but use quickly. this recipe does not keep. Use all at once. I’ve 1/2’d it with a pullet egg or use quail eggs to make for less batter. Do not double, make two batches.
