Poll: what type of cookware do you use?

All-Clad stainless steel, cast-iron skillets & griddle, and an enameled cast-iron dutch oven. There's no microwave in my kitchen either. I cook with butter, coconut oil, lard (homemade) and olive oil.
 
I would LOVE to use cast iron, they scare me somewhat - with greasing them up and what nots - I think I bought a heavy cast iron pan once, and never used it!

Exactamundo! I like cast iron or just plain heavy aluminum, too. Those Teflon things lose their coating no matter how much you pay for them or how careful you are with them.​

When I first moved up here with my SO and learned that the main cooking pans in the house were iron, I groaned. I grew up using them and my Dad had a ton of do's and don'ts concerning their use and cleaning. Much to my delight the ones in this house are sooooo well seasoned they are pretty much care free. My SO's dad seasoned them by building a bonfire and throwing them in it. 12+ years and they are just now starting to need reseasoning.
 
Making cornbread in a cast iron pan is a GREAT way to keep it seasoned.
Heat up your oil in the pan, pour it into the cornmeal mixture, mix, then back into the pan to bake in the oven.

I LOVE that idea! I think the seasoning process (done in the oven) stinks up the kitchen. Some of my old pieces need re-seasoning too.​
