Poll: what type of cookware do you use?

I need a suggestion for a griddle. The only piece of non-stick cookwear I have is my griddle. I have tried to make pancakes in my skillets, but I cannot get them to come out as well as on my griddle! I have seen the cast iron griddle plates that you lay over your stove burners. How well do those work?

Also, any suggestions for cooking pancakes in the skillet? I just can't seem to regulate the cooking temperature and the outside of the cakes either get burned or the inside is mushy.

I use cast iron, when DH and I got married My FIL gave me a big frying pan that belonged to his mama, my SIL gave me a new one the same size so I started out using the old one, it took awhile to get the new one seasoned properly. I love both of them.

). It's just a small round one, just big enough to fit over the large burner on our stove. You can cook one big or two medium-sized pancakes on it at a time, which is just fine for us. It works wonderful! I don't have any suggestions for you for cooking pancakes in the skillet, though. Don't know why that's happening to you--good luck! Pancakes on the cast iron griddle are awfully yummy....

I use the calphalon hard-anodized cookware. Not the non-stick, and I really love it. I have had it almost 10 years and it looks as great as the day I got it. My father, who has always been the cook in the family, will only use cast iron.
 
About those sticky pancakes, even though the directions say "just add water and stir," I have found out that if you add a couple of table spoons of bacon grease to the mixture, the pancakes don't stick. Try it, see if it works for you.

And if you are looking for good cast iron cooking pans and pots, I suggest looking in the second hand stores. Find one that some old lady has used for the last 80 years or so.

My son and his wife bought new cast iron cookware made in RED CHINA. They are out of the will now.

I have good stainless (Westbend Waterless) which I supplement with good cast iron. Still looking for a good dutch oven with the legs and the lid that hold the coals.
