It works wonderful! I don't have any suggestions for you for cooking pancakes in the skillet, though. Don't know why that's happening to you--good luck! Pancakes on the cast iron griddle are awfully yummy....
I don't see the difference between using a cast-iron skillet and a cast-iron griddle. I think that the reason I have problems has to do with the temperature. I always start off with a hot pan, so the batter sizzles, but I do need to turn it down and then they become mushy. My non-stick griddle is so regulated and easy to use that I continue to use it over and over even though I know it is not good for us.
