So... when you grow potatoes, they grow pretty fast. And then you can harvest them. Well here's where my question comes in.

Have any of you replanted the potatoes right away immediately within the same season, using the potatoes you just barely harvested? I'm hoping for more information on this and how it works. Like, how much rest period is needed between how fast they can start up and sprout when they are just formed themselves?

Potatoes are typically quoted as growing to maturity within 60 days. (Although its less than 80, I don't necessarily agree with 60.) This means, in theory someone could plant them twice, IF they manage fertility to be retained.

Yes it can be done. I always grow two rounds of potatoes a year. I plant back the very small potatoes from my first harvest and get a second smaller harvest.

Yes it can be done. I buy my seed potatoes from Johnnys and have planted them back to back. In January when they have their seed potatoes available for order I plan on ordering 200lbs so I have enough to harvest for eating and re-seeding.
