Preserving whole peppers

Hey all,

I have an abundance of hot peppers (200 plants all varieties). I would like to preserve these whole in ornamental jars for decoration, although if pickled would be good to eat!! I have done a bit of research and can't find a recipe for whole peppers. Anybody have any experience with this? Thanks!!

And others just say to put a small slit in each one if leaving whole, which makes good sense. There's a simpler recipe here: http://www.cooks.com/rec/view/0,1636,152172-228199,00.html

It's just basically a vinegar, water, and salt solution you use, and a water bath canner. I can see no reason why large ones would have to be cut up if you slit them enough for the solution to get inside the pepper.
