I read that 8 wk old chicks need probiotics in their main water supply. So they’ve been outside in the coup and run for about 6 days, still haven’t figured out the yellow toggle in the cup, although I go out periodically during the day to show them. They do drink the water in the cup, but don’t tap to get the water. I’m concerned that the probiotic water might get stale. The weather has ranged from high 40s - 70s. Any ideas?

First of all,,,, I do not think you need the probiotics. You can give it to them, and should not hurt, but is not necessary. I only gave my chickens CLEAN WATER, I know that many peeps opt to give their chickens electrolytes, as well as ACV. Some of these are good in certain times, like HOT WEATHER, or chickens having health/digestive issues.
When you say the 8 week chicks do not push the yellow toggle?,,, is it because the cup is full of water from you energizing the toggle, and chicks just drink what is plentiful in cup? Let cups run low, and they will push toggle without knowing they did, just to reach water in cup.

I'd be less worried about the probiotics going stale and more worried about dehydration if they can't figure out the toggles. You may need to show them how to use them by picking up a few of the more bolder chicks and using their beaks to press on the toggle.

That said, no, you don't "need" probiotics. All they need is water. Other stuff can be added short term as needed if you're treating for specific issues (i.e. shipping stress when you first get them).
