Processed first 2 birds today

Today was the day that I had to take care of the processing of 2 of our roosters. They were up to size, and ready to go. When I went in to the barn this morning, I separated them in to the brooder (that is currently empty and empty for the first time since February!! WOO HOO) and knew I would be able to get to them this afternoon. They had water, but no food in the brooder.

This afternoon, I went in and got the first one. This one was tough for me. He was the first chicken I hatched in the incubator me and my daughter built, so he held a special place in my heart. Once he had bled out, I had decided to skin them instead of scalding them (I don't have a scalder yet). I had watched the Custer Family Farm skining video a number of times, so I thought I was ready.

The skining went smoothly except what I thought were sharp knives, were NOT as sharp as I would have liked. I will need to get them sharper next time or get some knew knives. They are now soaking in a brine getting ready for dinner tomorrow night!!

Thanks everybody for all the information that I have gotten from all of you over the last little while!
